一般的な蒸し時間倍の60 秒～80 秒ほど蒸すことにより渋みが抑えられ、葉が細かくなり、抽出すると濃い緑色でまろやかなコクがあるのが特長です。抽出しやすく、水出しでいれるお茶としても向いています。
Tea leaves of Sencha are usually steamed for 30 – 40 minutes but those of Fukamushi
Sencha are steamed twice the time length, for 60 – 80 minutes. The astringency of green
tea is suppressed by this longer steaming time. This fukamushi process also makes the tips
of the leaves broken. Those small particles make the green tea dark and sweet when
brewed. Fukamushi Sencha is easy to brew for everyone so it would be suitable for cold
brewed green tea in summer.
